Mediterranean Stir Fry Recipe

Check out this amazingly delicious and healthy Mediterranean Stir Fry recipe.  Perfect for summer!

Ingredients

  • 1 bunch of fresh asparagus
  • 2 cups fresh sliced mushrooms
  • 1/2 cup onion diced
  • 1 tbsp minced garlic
  • 1 cup roasted tomatoes
  • 1/2 cup cooked artichokes
  • 1/2 lbs bacon cooked and crumbled
  • Garnish with black olives and feta

Directions

  1. Heat the olive oil in a skillet over medium heat.
  2. After olive oil heats up, throw in the ingredients and sauté over medium heat for about seven minutes
  3. Serve warm and garnish with black olives and feta cheese
