Chili-Grilled Chicken Kebabs

Cook: 3-4 minutes | Servings: 4-6

Ingredients

  • 1 Tablespoon chili powder
  • 1 small onion
  • 2 garlic cloves
  • 1 tablespoon lemon juice
  • 1/4 teaspoon of salt
  • 1 teaspoon dried oregano
  • 1 tablespoon of olive oil
  • 1 1/2 lbs boneless chicken

Directions

  1. In a food processor add chili powder, onion (cut up), garlic, juice, oregano, and oil.  Process until finely minced and well blended.
  2. Combine mixture and chicken (cut in to chunks) in a large bowl, and stir to coat the chicken.  Marinate, covered and refrigerate for 6 hours.
  3. Place chicken pieces on skewers.  Grill for 3 to 4 minutes on medium heat, turning and grilling until cooked through.
  4. Enjoy!
